Ingredients

  • 4 pounds cucumbers
  • 0.5 cup pickling salt
  • 4 cups white vinegar
  • 5 cups granulated sugar
  • 2 cups water
  • 2 tablespoons mustard seeds
  • 1 tablespoon celery seeds
  • 1 teaspoon turmeric
  • 1 pound small onions (optional)

Directions

Step 1

Wash the cucumbers thoroughly and cut into 1/4-inch slices. Peel and slice onions, if using.

Step 2

In a large bowl, layer the cucumber slices with pickling salt. Cover with cold water and place a plate on top to keep the cucumbers submerged. Let sit for 12-24 hours in a cool place or refrigerator.

Step 3

After the soaking period, drain and rinse the cucumber slices well to remove the excess salt.

Step 4

In a large pot, combine white vinegar, granulated sugar, water, mustard seeds, celery seeds, and turmeric. If using onions, add them to the pot as well.

Step 5

Heat the mixture over medium heat, stirring until the sugar is completely dissolved.

Step 6

Add the drained cucumber slices to the pot and bring the mixture to a gentle boil. Simmer for 10 minutes, stirring occasionally.

Step 7

Carefully transfer the hot pickles and brine into sterilized jars, leaving about 1/2 inch of headspace at the top. Make sure the cucumbers are fully submerged in the brine.

Step 8

Seal the jars with sterilized lids and process in a boiling water bath for 10 minutes to ensure proper preservation.

Step 9

Remove jars from the water bath and let cool at room temperature. Store in a cool, dark place for at least 2 weeks to allow the flavors to develop.

Step 10

Serve and enjoy Grandpa Rowand's Canadian Sweet Pickles with your favorite dishes or as a snack!
