Ingredients

  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 large yellow onions, thinly sliced
  • 1 teaspoon sugar
  • 2 large garlic cloves, minced
  • 1 cup dry white wine
  • 8 cups beef stock
  • 3 fresh thyme sprigs
  • 1 bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 loaf French baguette, sliced into 1-inch rounds
  • 2 cups Gruyère cheese, shredded
  • 0.5 cups Parmesan cheese, grated

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, heat the butter and olive oil over medium heat until the butter is melted.

Step 2

Add the sliced onions to the pot, stirring to coat them in the butter and oil. Cook for 10 minutes, stirring occasionally.

Step 3

Sprinkle the sugar over the onions, which will help with caramelization. Continue cooking the onions for about 40 minutes, stirring frequently, until they are deeply golden and caramelized.

Step 4

Add the minced garlic to the pot and cook for 1 minute, stirring frequently to prevent burning.

Step 5

Pour in the white wine, scraping the bottom of the pot with a wooden spoon to deglaze it. Allow the wine to simmer for 5 minutes, reducing slightly.

Step 6

Add the beef stock, thyme sprigs, bay leaf, salt, and black pepper to the pot. Bring the soup to a simmer, then reduce the heat to low. Cover and cook for 20 minutes to let the flavors meld.

Step 7

While the soup is simmering, preheat your broiler. Place the sliced baguette rounds on a baking sheet and toast them on each side until golden brown.

Step 8

Remove the thyme sprigs and bay leaf from the soup. Taste and adjust the seasoning as needed with additional salt or pepper.

Step 9

Ladle the soup into oven-safe bowls, leaving space at the top. Place one or two toasted baguette slices on top of the soup in each bowl.

Step 10

Sprinkle a generous amount of Gruyère and Parmesan cheese over the bread, ensuring it covers the edges of both the bread and soup.

Step 11

Place the bowls on a baking sheet and transfer to the broiler. Broil for 2-3 minutes or until the cheese is melted, golden, and bubbly.

Step 12

Carefully remove the bowls from the oven, let them cool slightly, and serve immediately. Enjoy Grandpa Parker's heart-warming French onion soup!
