Ingredients

  • 1.5 pounds kielbasa sausage
  • 32 ounces sauerkraut
  • 2 tablespoons unsalted butter
  • 1 large yellow onion
  • 1 medium apple
  • 1 tablespoon brown sugar
  • 1 teaspoon caraway seeds
  • 1 cup chicken broth
  • 1 whole bay leaf
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon salt

Directions

Step 1

Slice the kielbasa sausage into 1/4-inch thick rounds and set aside.

Step 2

Drain and rinse the sauerkraut in cold water to reduce its saltiness, then set it aside to drain completely.

Step 3

Peel and thinly slice the yellow onion. Core and dice the apple into small cubes.

Step 4

Heat a large skillet or Dutch oven over medium heat. Add the unsalted butter and allow it to melt.

Step 5

Add the sliced onion to the skillet and sauté for 3-4 minutes, until softened and translucent.

Step 6

Stir in the diced apple, cooking for another 2-3 minutes until slightly softened.

Step 7

Add the drained sauerkraut to the skillet, followed by the brown sugar and caraway seeds. Stir well to combine the flavors.

Step 8

Pour in the chicken broth and tuck the bay leaf into the mixture.

Step 9

Season with black pepper and salt, then stir gently to incorporate.

Step 10

Distribute the sliced kielbasa evenly across the sauerkraut mixture.

Step 11

Reduce the heat to low, cover the skillet or Dutch oven, and let it simmer for 30 minutes. Stir occasionally to prevent sticking.

Step 12

After 30 minutes, remove the bay leaf and taste the sauerkraut mixture. Adjust seasoning with additional salt or pepper if needed.

Step 13

Serve hot, either on its own or with a side of mashed potatoes or crusty bread for a complete meal.
