Ingredients

  • 3 tablespoons Olive oil
  • 4 pieces Garlic cloves (minced)
  • 6 pieces Anchovy fillets (in oil)
  • 1 teaspoon Red chili flakes
  • 1 can Canned whole peeled tomatoes (28 oz)
  • 0.5 cup Kalamata olives (pitted and sliced)
  • 2 tablespoons Capers (rinsed)
  • 2 tablespoons Fresh parsley (chopped)
  • 1 teaspoon Dried oregano
  • 0 Salt (to taste)
  • 0 Ground black pepper (to taste)

Directions

Step 1

Heat the olive oil in a large skillet or saucepan over medium heat.

Step 2

Add the minced garlic, anchovy fillets, and red chili flakes. Stir and cook for 2-3 minutes, mashing the anchovies with a spoon until they disintegrate and form a paste.

Step 3

Pour in the canned tomatoes with their juice. Use a wooden spoon to break the tomatoes into smaller pieces as they cook.

Step 4

Stir in the sliced olives, capers, parsley, and dried oregano. Mix well to combine all ingredients.

Step 5

Bring the sauce to a gentle simmer and let it cook for 15-20 minutes, stirring occasionally, until it thickens slightly.

Step 6

Taste the sauce and season with salt and ground black pepper as needed (keep in mind that the anchovies, capers, and olives add natural saltiness).

Step 7

Remove the sauce from heat and serve immediately over your favorite pasta, or store in an airtight container in the refrigerator for up to 3 days.
