Ingredients

  • 12 oz dry rotini pasta
  • 2 cups grape tomatoes
  • 1 large cucumber
  • 0.5 large red onion
  • 1 cup black olives, sliced
  • 1 cup feta cheese, crumbled
  • 0.25 cup extra virgin olive oil
  • 0.25 cup red wine vinegar
  • 1 teaspoon dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and rinse with cold water to cool the pasta, then set aside.

Step 2

Slice the grape tomatoes in half. Peel the cucumber, deseed it if desired, and dice into small chunks. Thinly slice the red onion into strips. Set all prepared vegetables aside.

Step 3

In a small bowl, whisk together the olive oil, red wine vinegar, dijon mustard, minced garlic, dried oregano, salt, and black pepper to make the dressing.

Step 4

In a large mixing bowl, combine the cooked pasta, grape tomatoes, cucumber, red onion, black olives, and crumbled feta cheese.

Step 5

Pour the dressing over the pasta salad and toss gently to coat all the ingredients evenly.

Step 6

Cover the bowl with plastic wrap or transfer the salad to an airtight container, and refrigerate for at least 30 minutes to allow the flavors to blend.

Step 7

Before serving, give the salad a good toss and taste. Adjust seasoning with additional salt or pepper if needed.

Step 8

Serve chilled and enjoy Grandpa's favorite pasta salad!
