Ingredients

  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 large green bell pepper, diced
  • 4 cloves garlic, minced
  • 28 ounces canned diced tomatoes (undrained)
  • 16 ounces canned tomato sauce
  • 15 ounces canned kidney beans (drained and rinsed)
  • 15 ounces canned black beans (drained and rinsed)
  • 3 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional, for heat)
  • 1.5 teaspoons salt
  • 1 teaspoon black pepper
  • 1 cup beef broth
  • 1 tablespoon vegetable oil

Directions

Step 1

Heat a large pot over medium-high heat and add the vegetable oil.

Step 2

Add the diced onion and green bell pepper to the pot. Sauté for 5–7 minutes until softened.

Step 3

Stir in the minced garlic and cook for 1–2 minutes, until fragrant.

Step 4

Add the ground beef to the pot. Break it apart with a spoon and cook until browned, about 8–10 minutes. Drain excess fat if necessary.

Step 5

Stir in the chili powder, cumin, paprika, oregano, cayenne pepper (if using), salt, and black pepper. Cook for 1–2 minutes to bloom the spices.

Step 6

Add the canned diced tomatoes (with their juices), tomato sauce, kidney beans, black beans, and beef broth. Stir well to combine.

Step 7

Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot partially with a lid and let it simmer for 60–75 minutes, stirring occasionally.

Step 8

Taste and adjust seasoning if needed. Add more salt, spices, or a splash of beef broth to reach the desired flavor and consistency.

Step 9

Serve hot in bowls, garnished with shredded cheese, sour cream, green onions, or crackers if desired.
