Ingredients

  • 1 pound Elbow macaroni
  • 4 tablespoons Unsalted butter
  • 4 tablespoons All-purpose flour
  • 3 cups Whole milk
  • 1 cup Heavy cream
  • 3 cups Cheddar cheese, shredded
  • 1.5 cups Gruyère cheese, shredded
  • 0.5 cup Parmesan cheese, grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Paprika
  • 1 cup Panko breadcrumbs
  • 2 tablespoons Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente, according to package instructions (about 7–8 minutes). Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour to create a roux. Cook for 1–2 minutes, stirring constantly, to remove the raw flour taste.

Step 4

Gradually whisk in the milk and heavy cream, ensuring there are no lumps. Cook the mixture, stirring frequently, until it thickens (about 5 minutes).

Step 5

Reduce the heat to low and gradually stir in the shredded Cheddar, Gruyère, and Parmesan cheeses. Stir until the cheeses are fully melted and the sauce is smooth.

Step 6

Season the cheese sauce with salt, black pepper, and paprika to taste.

Step 7

Combine the cooked macaroni with the cheese sauce in a large mixing bowl, stirring to coat the pasta evenly.

Step 8

Pour the macaroni and cheese mixture into the prepared baking dish and smooth out the surface.

Step 9

In a small bowl, mix the panko breadcrumbs with olive oil. Sprinkle the breadcrumb mixture evenly over the top of the macaroni and cheese.

Step 10

Bake in the preheated oven for 20–25 minutes, or until the topping is golden brown and crispy.

Step 11

Remove from the oven and let the dish cool for 5–10 minutes before serving. Enjoy!
