Ingredients

  • 1 medium-sized (about 4 pounds) Chicken (whole)
  • 10 cups Water
  • 3 medium, peeled and chopped Carrots
  • 3 chopped Celery stalks
  • 1 large, diced Yellow onion
  • 3 minced Garlic cloves
  • 2 whole Bay leaves
  • 3 sprigs Fresh thyme
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 12 ounces Egg noodles
  • 0.25 cup, chopped Fresh parsley

Directions

Step 1

Place the whole chicken in a large stockpot and cover with 10 cups of water.

Step 2

Add the chopped carrots, celery, onion, minced garlic, bay leaves, and fresh thyme to the pot.

Step 3

Season with 2 teaspoons of salt and 1 teaspoon of black pepper.

Step 4

Bring the pot to a boil over medium-high heat, then reduce the heat to low and let it simmer for 1 hour, skimming any foam that rises to the top.

Step 5

After 1 hour, carefully remove the chicken from the pot and let it cool slightly. Strain the broth to remove any solids, returning the liquid to the pot.

Step 6

Shred the cooked chicken, discarding the bones and skin. Set the shredded meat aside.

Step 7

Bring the strained broth back to a gentle boil and add the egg noodles. Cook according to the package instructions until they are tender, about 8-10 minutes.

Step 8

Add the shredded chicken back into the pot with the cooked noodles and stir to combine.

Step 9

Adjust seasoning with additional salt and pepper as needed.

Step 10

Garnish with freshly chopped parsley before serving. Enjoy warm!
