Ingredients

  • 2.5 cups All-purpose flour
  • 1.5 cups Granulated sugar
  • 1 teaspoon Baking soda
  • 1 teaspoon Salt
  • 1 teaspoon Cocoa powder
  • 1.5 cups Vegetable oil
  • 1 cup Buttermilk
  • 2 Large eggs
  • 2 ounces Red food coloring
  • 1 teaspoon Vanilla extract
  • 1 teaspoon White vinegar
  • 1 package (8 ounces) Cream cheese (softened)
  • 1 cup Unsalted butter (softened)
  • 4 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for frosting)
  • 0.5 cup Pecan pieces (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

Step 2

In a medium bowl, sift together the flour, sugar, baking soda, salt, and cocoa powder. Set aside.

Step 3

In a large mixing bowl, combine the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and white vinegar using a hand mixer or stand mixer on medium speed.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until well combined and smooth.

Step 5

Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.

Step 6

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center of the cakes comes out clean.

Step 7

Allow the cakes to cool in the pans for 10 minutes, then remove them from the pans and transfer to a wire rack to cool completely.

Step 8

To prepare the frosting, beat together the cream cheese and butter in a large bowl using a mixer on medium speed until smooth and fluffy.

Step 9

Gradually add the powdered sugar, one cup at a time, mixing well after each addition. Then add the vanilla extract and beat again until fully incorporated.

Step 10

Spread a layer of frosting on top of one cake layer. Place the second cake layer on top and spread frosting over the top and sides of the cake.

Step 11

If desired, sprinkle pecan pieces on top of the cake for garnish.

Step 12

Refrigerate the cake for at least 30 minutes before serving to let the frosting set. Slice and enjoy!
