Ingredients

  • 2.5 cups all-purpose flour
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 2 teaspoons baking soda
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter
  • 0.5 cup granulated sugar
  • 1 cup molasses
  • 1 unit large egg
  • 1 cup buttermilk
  • 0.5 cup boiling water

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch baking dish, or line it with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, ground ginger, cinnamon, nutmeg, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter and sugar together using a hand mixer or stand mixer until fluffy and light in color, about 2-3 minutes.

Step 4

Add the molasses and mix until fully incorporated. Scrape down the sides of the bowl as needed.

Step 5

Beat in the egg until well combined.

Step 6

Gradually add the dry ingredients to the wet ingredients in three additions, alternating with the buttermilk. Begin and end with the dry ingredients. Mix just until incorporated; do not overmix.

Step 7

Carefully stir in the boiling water until the batter is smooth. The batter will be thin, but this is normal.

Step 8

Pour the batter into the prepared baking dish and spread it evenly with a spatula.

Step 9

Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the gingerbread from the oven and let it cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.

Step 11

Slice and serve warm or at room temperature. Optionally top with whipped cream or a dusting of powdered sugar.
