Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 1 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves from the cabbage and rinse under cold water. Cut the cabbage into quarters and remove the core.

Step 2

Using a sharp knife or a mandoline, thinly slice the cabbage into fine shreds. Place the shredded cabbage into a large mixing bowl.

Step 3

Peel the carrots and grate them using the large holes of a box grater or a food processor. Add the grated carrots to the mixing bowl with the cabbage.

Step 4

In a medium-sized bowl, prepare the dressing by whisking together the mayonnaise, apple cider vinegar, sugar, Dijon mustard, salt, and black pepper until smooth and well combined.

Step 5

Pour the dressing over the shredded cabbage and carrots. Toss together using tongs or a large spoon to ensure the vegetables are evenly coated in the dressing.

Step 6

Cover the bowl with plastic wrap and refrigerate the coleslaw for at least 30 minutes to allow the flavors to meld. This step is optional but recommended for best flavor.

Step 7

Before serving, give the coleslaw a final toss. Taste and adjust seasoning if necessary, adding more salt, pepper, or sugar to your liking.

Step 8

Serve chilled as a side dish or on top of sandwiches or burgers. Store leftovers in an airtight container in the refrigerator for up to 3 days.
