Ingredients

  • 12 large ripe tomatoes
  • 4 medium white onions
  • 2 large red bell peppers
  • 2 large green bell peppers
  • 2 cups white vinegar
  • 1.5 cups granulated sugar
  • 2 tablespoons kosher salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 0.5 teaspoon ground turmeric

Directions

Step 1

Wash and core the tomatoes, then chop them into large chunks. Peel and chop the onions into chunks as well.

Step 2

Cut the red and green bell peppers in half, remove the seeds, and chop them into chunks.

Step 3

In a food processor, pulse the tomatoes, onions, and bell peppers in batches until finely chopped but not pureed.

Step 4

Pour the chopped mixture into a large, heavy-bottomed stockpot and stir in the white vinegar, granulated sugar, and kosher salt.

Step 5

Add the cinnamon, cloves, allspice, and turmeric to the pot and stir to combine.

Step 6

Bring the mixture to a boil over medium-high heat, then reduce the heat to medium-low and simmer uncovered for 90 minutes, stirring occasionally to prevent sticking.

Step 7

As the sauce cooks, it will thicken and reduce slightly. Taste and adjust seasoning if desired.

Step 8

Once the cooking time is complete, let the chili sauce cool slightly. For a smoother texture, you can use an immersion blender or regular blender to process it to your preferred consistency.

Step 9

Ladle the sauce into sterilized glass jars while still warm, leaving 1/2-inch of headspace. Seal the jars tightly.

Step 10

To preserve, process the jars in a boiling water bath for 15 minutes, then let them cool completely before storing.

Step 11

Store the chili sauce in a cool, dark place for up to 1 year, or in the refrigerator once opened. Enjoy as a condiment or marinade!
