Ingredients

  • 2 pounds Ground beef
  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 1 cup Shredded cheddar cheese
  • 1 medium Diced green bell pepper
  • 1 medium Diced onion
  • 2 cloves Minced garlic
  • 1 10-ounce can Canned diced tomatoes with green chilies (e.g., Rotel)
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup Ketchup
  • 1 tablespoon Hot sauce (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a standard loaf pan or line it with parchment paper.

Step 2

In a large mixing bowl, combine the ground beef, eggs, and breadcrumbs. Mix until just combined.

Step 3

Add the shredded cheddar cheese, diced green bell pepper, diced onion, and minced garlic to the bowl.

Step 4

Drain the canned diced tomatoes with green chilies and add them to the mixture. Reserve a small amount of the juice for later use.

Step 5

Season the mixture with chili powder, ground cumin, salt, and black pepper. Optionally, add hot sauce for a spicy kick.

Step 6

Using clean hands, mix everything together until well blended, but do not overwork the meat as it can become tough.

Step 7

Transfer the meat mixture into the prepared loaf pan, pressing it down evenly and smoothing out the top.

Step 8

In a small bowl, mix the ketchup with the reserved tomato juice and spread it evenly over the top of the meatloaf.

Step 9

Place the loaf pan in the preheated oven and bake for 60 minutes, or until the meatloaf reaches an internal temperature of 160°F (71°C).

Step 10

Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.

Step 11

Serve warm with a side of rice, mashed potatoes, or a fresh green salad for a complete meal.
