  • 1.5 cups white vinegar

  • 3 oz liquid pectin
  • 0.5 cup water
  • 2 drops green food coloring (optional)

Directions

Step 1

Begin by wearing gloves to handle the jalapeños. Seed and finely chop the jalapeños and the green bell pepper. If you prefer extra heat, you can leave some seeds in the jalapeños.

In a blender or food processor, combine the chopped jalapeños, green bell pepper, and water. Blend until smooth.

Pour the blended mixture into a large pot. Add the vinegar and sugar to the pot, stirring to combine.

Bring the mixture to a boil over medium heat, stirring constantly to prevent sticking.

Once boiling, reduce the heat to medium-low and let it simmer for 10 minutes, occasionally skimming off any foam that forms on the surface.

Add the liquid pectin and return the mixture to a rolling boil. Boil for exactly 1 minute, stirring constantly.

Remove the jars from the water bath and let them cool completely on a kitchen towel. Once cool, check that the lids have sealed properly by pressing down on the center; it should not pop back up.
