Ingredients

  • 1 pound Ground beef
  • 2 medium Russet potatoes
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 2 cloves Garlic cloves
  • 1 teaspoon Ground cumin
  • 1.5 teaspoons Chili powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 Corn tortillas
  • 2 cups Shredded lettuce
  • 1 cup Diced tomatoes
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 0.5 cup Sour cream

Directions

Step 1

Peel the russet potatoes and chop them into small, bite-sized cubes. Rinse under cold water and pat dry.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the potatoes and cook, stirring occasionally, until they are golden brown and tender, about 10-12 minutes. Remove from the skillet and set aside.

Step 3

Dice the yellow onion and finely mince the garlic cloves.

Step 4

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the diced onion and minced garlic, cooking until fragrant and the onion is translucent, about 3-4 minutes.

Step 5

Add the ground beef to the skillet, breaking it up with a spatula or wooden spoon. Cook until the beef is browned and fully cooked, about 6-8 minutes. Drain any excess fat from the skillet.

Step 6

Stir in the cooked potatoes, ground cumin, chili powder, salt, and black pepper. Mix well to evenly coat the meat and potatoes with the spices. Cook for an additional 2-3 minutes to allow the flavors to meld. Remove from heat.

Step 7

Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side or until soft and pliable.

Step 8

Assemble the tacos by spooning the meat and potato mixture into each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, and a dollop of sour cream.

Step 9

Serve immediately and enjoy Grandma Vicky's classic meat and potato tacos!
