Ingredients

  • 2 pounds Yukon Gold potatoes
  • 6 slices Bacon
  • 1 medium, diced Yellow onion
  • 0.5 cup Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 cup Water
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Wash and scrub the Yukon Gold potatoes. Place them in a large pot, cover with water, and bring to a boil over medium-high heat. Cook for 15-20 minutes, or until the potatoes are fork-tender.

Step 2

While the potatoes cook, place the bacon slices in a large skillet over medium heat. Cook until crispy, about 5-7 minutes, and transfer to a paper towel-lined plate to drain. Reserve 3 tablespoons of the bacon drippings in the skillet.

Step 3

Once the potatoes are done, drain them and set aside to cool slightly. When cool enough to handle, peel and cut them into 1/4-inch slices. Place the sliced potatoes in a large serving bowl.

Step 4

In the same skillet with the reserved bacon drippings, sauté the diced onion over medium heat until it becomes soft and translucent, about 3-4 minutes.

Step 5

Reduce the heat to low and stir in the apple cider vinegar, granulated sugar, Dijon mustard, salt, pepper, and water. Cook for 2-3 minutes, stirring frequently, until the dressing is heated through and the sugar is dissolved.

Step 6

Crumble the cooked bacon and add it to the serving bowl with the sliced potatoes. Pour the warm dressing over the potatoes and gently toss to coat everything evenly.

Step 7

Sprinkle the chopped fresh parsley over the top and serve the potato salad warm. Enjoy!
