  • 3 large Eggs
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 1 cup Vegetable oil
  • 1 cup Honey
  • 1 cup Freshly brewed coffee (cooled)
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Orange zest
  • 0.5 cup Chopped walnuts or sliced almonds (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9x13-inch baking pan or two 9-inch round cake pans with parchment paper.

In a medium-sized bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground cloves, ground nutmeg, and salt. Set aside.

In a large mixing bowl, beat the eggs using a hand mixer or stand mixer on medium speed until light and frothy, about 2 minutes.
