Ingredients

  • 1 cup All-purpose flour
  • 1 cup Milk
  • 0.5 cup Water
  • 3 large Eggs
  • 2 tablespoons Unsalted butter (melted)
  • 1 tablespoon Sugar
  • 0.5 teaspoon Salt
  • 1 cup Farmer’s cheese or ricotta
  • 0.5 cup Sour cream
  • 1 teaspoon Vanilla extract
  • 1 large Egg (for filling)
  • 2 tablespoons Powdered sugar
  • 2 tablespoons Butter (for cooking)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, milk, water, eggs, melted butter, sugar, and salt until the batter is smooth and thin. Allow the batter to rest for 15 minutes.

Step 2

While the batter is resting, prepare the filling: In a medium bowl, mix together the farmer’s cheese (or ricotta), sour cream, vanilla extract, powdered sugar, and one egg until a creamy consistency is achieved.

Step 3

Heat a non-stick skillet or crepe pan over medium heat and lightly grease it with a small amount of butter. Pour about 1/4 cup of the crepe batter into the pan and swirl it to evenly coat the bottom.

Step 4

Cook the crepe for about 1-2 minutes, or until the edges begin to lift and the bottom is lightly golden. Flip the crepe and cook for another 30 seconds to 1 minute. Remove the crepe and repeat until all the batter is used, stacking crepes on a plate.

Step 5

Take each crepe and place about 2 tablespoons of the cheese filling in the center. Fold the sides in and roll the crepe into a tight log, enclosing the filling.

Step 6

In a large skillet, melt 1-2 tablespoons of butter over medium heat. Working in batches, add the filled blintzes and cook until golden brown and slightly crisp on both sides, about 2-3 minutes per side.

Step 7

Serve the blintzes warm with a dollop of sour cream, fresh fruit, or a drizzle of honey, if desired. Enjoy Grandma Reilkoff's authentic Russian blintzes!
