Ingredients

  • 1 pound Navy beans
  • 6 slices Bacon
  • 1 medium, diced Yellow onion
  • 0.25 cup Brown sugar
  • 0.25 cup Molasses
  • 0.5 cup Ketchup
  • 2 tablespoons Dijon mustard
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 cups Water

Directions

Step 1

Rinse and sort the navy beans, discarding any debris. Soak the beans in a large bowl of water overnight or for at least 8 hours.

Step 2

After soaking, drain and rinse the beans. Set them aside.

Step 3

In a large, deep skillet or Dutch oven, cook the bacon over medium heat until it is crispy. Remove the bacon and set it on a paper towel to drain, leaving the bacon grease in the pan.

Step 4

Add the diced onion to the bacon grease and sauté until softened, about 5 minutes.

Step 5

Crumble the bacon into small pieces and set aside for later.

Step 6

Preheat your oven to 300°F (150°C).

Step 7

In a medium bowl, whisk together the brown sugar, molasses, ketchup, Dijon mustard, apple cider vinegar, Worcestershire sauce, garlic powder, smoked paprika, salt, and black pepper.

Step 8

Add the soaked beans to the skillet with the cooked onions, stirring to combine.

Step 9

Pour the sauce mixture over the beans and add the 3 cups of water. Stir well.

Step 10

Bring the mixture to a gentle simmer over medium heat.

Step 11

Transfer the bean mixture to a baking dish or leave it in the Dutch oven if oven-safe. Cover with a lid or foil.

Step 12

Bake for 2.5 to 3 hours, checking occasionally and stirring if needed. If the beans look too dry, gradually add a bit more water.

Step 13

Once the beans are tender and the sauce has thickened to your liking, remove from the oven. Stir in the crumbled bacon.

Step 14

Serve the baked beans warm as a comforting side dish.
