Ingredients

  • 4 large Egg whites
  • 200 grams Granulated sugar
  • 2 teaspoons Cornstarch
  • 1 teaspoon White vinegar
  • 1 teaspoon Vanilla extract
  • 250 milliliters Heavy cream
  • 2 tablespoons Vanilla custard powder
  • 300 milliliters Whole milk
  • 2 tablespoons Powdered sugar
  • 200 grams Fresh fruits (e.g., strawberries, kiwi, mango, or berries)

Directions

Step 1

Preheat your oven to 120°C (250°F) and line a baking sheet with parchment paper.

Step 2

In a clean, dry bowl, beat the egg whites using an electric mixer on medium speed until soft peaks form.

Step 3

Gradually add the granulated sugar, one tablespoon at a time, while continuing to beat. Increase the mixer speed to high and beat until the mixture is glossy and forms stiff peaks.

Step 4

Gently fold in the cornstarch, vinegar, and vanilla extract using a spatula.

Step 5

Spoon the meringue onto the prepared baking sheet, forming a circle approximately 20 cm (8 inches) in diameter. Use the back of a spoon to create a slight well in the center.

Step 6

Bake the meringue in the preheated oven for 90 minutes. Once done, turn off the oven and let the meringue cool completely inside with the oven door slightly ajar. This prevents it from cracking.

Step 7

While the meringue is cooling, prepare the custard cream. In a small saucepan, combine the vanilla custard powder, sugar, and milk. Cook over medium heat, stirring constantly, until the mixture thickens. Set aside to cool.

Step 8

In a separate bowl, whip the heavy cream until soft peaks form. Fold the cooled custard into the whipped cream to create the custard cream topping.

Step 9

Once the meringue base is fully cooled, gently transfer it to a serving platter. Top it with the custard cream, spreading it evenly.

Step 10

Arrange the fresh fruits over the custard cream for decoration.

Step 11

Serve immediately or refrigerate for up to 2 hours before serving. Enjoy Grandma Perritt's delightful Pavlova with Custard Cream!
