Ingredients

  • 1 Chicken (whole, about 4-5 lbs)
  • 10 cups Water
  • 2 Carrots (peeled and sliced)
  • 2 Celery stalks (chopped)
  • 1 Yellow onion (quartered)
  • 3 Garlic cloves (peeled, smashed)
  • 2 Bay leaves
  • 1 teaspoon Dried thyme
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 cups All-purpose flour
  • 2 large Eggs
  • 2 tablespoons Milk
  • 2 tablespoons Butter (optional, for enriched broth flavor)
  • 2 tablespoons Parsley (chopped, for garnish)

Directions

Step 1

Place the whole chicken in a large stockpot with 10 cups of water. Add the carrots, celery, quartered onion, smashed garlic, bay leaves, thyme, salt, and black pepper.

Step 2

Bring the pot to a boil over medium-high heat. Once boiling, reduce to a simmer and cook for about 1.5 to 2 hours, or until the chicken is tender and fully cooked.

Step 3

Carefully remove the chicken from the pot and set it aside to cool slightly. Strain the broth through a fine-mesh sieve and discard the vegetables and spices. Reserve the broth and return it to the stockpot.

Step 4

While the chicken cools, make the egg noodles. In a large mixing bowl, combine the flour, eggs, and milk. Mix until it forms a smooth, slightly sticky dough.

Step 5

Lightly flour a clean work surface and roll out the dough into a thin sheet, about 1/8 inch thick. Use a sharp knife or pizza cutter to slice the dough into thin strips (noodles). Let the noodles rest for at least 10 minutes.

Step 6

Shred the chicken into bite-sized pieces, discarding the skin and bones.

Step 7

Bring the reserved broth back to a gentle boil. Add the freshly made noodles, a handful at a time, to prevent clumping. Simmer for 10-12 minutes or until the noodles are tender.

Step 8

Stir the shredded chicken back into the pot and simmer for an additional 5 minutes to heat through. Taste and adjust seasoning with more salt or pepper if needed.

Step 9

If a richer broth is desired, stir in the optional butter before serving.

Step 10

Ladle the chicken and noodles into bowls, garnish with chopped parsley, and serve hot.
