Ingredients

  • 3 cups Cooked, shredded chicken
  • 2 cups Shredded cheddar cheese
  • 1 cup Shredded Monterey Jack cheese
  • 8 count Flour tortillas
  • 2 cups Red enchilada sauce
  • 1 cup Sour cream
  • 1 can (4 ounces) Diced green chiles
  • 2 tablespoons Chopped fresh cilantro
  • 1 teaspoon Minced garlic
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Vegetable oil
  • 2 tablespoons Chopped green onions (optional garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.

Step 2

In a large mixing bowl, combine the shredded chicken, 1 cup of shredded cheddar cheese, diced green chiles, minced garlic, ground cumin, salt, and black pepper. Mix until all ingredients are evenly distributed.

Step 3

Spread 1/2 cup of enchilada sauce over the bottom of the greased baking dish to prevent sticking and to add flavor.

Step 4

Warm the flour tortillas in the microwave or on a dry skillet for a few seconds to make them pliable.

Step 5

Spoon approximately 1/3 cup of the chicken mixture into the center of each tortilla. Roll the tortillas tightly and place them seam-side down in the prepared baking dish.

Step 6

Once all tortillas are filled and arranged in the dish, pour the remaining enchilada sauce evenly over the top, ensuring all tortillas are covered.

Step 7

In a small bowl, mix the sour cream with 1 tablespoon of the chopped cilantro. Spoon dollops of the sour cream mixture over the enchiladas, then sprinkle the remaining cheddar cheese and all the Monterey Jack cheese over the top.

Step 8

Bake in the preheated oven uncovered for 25-30 minutes, or until the cheese is melted and bubbly.

Step 9

Remove from the oven and let the enchiladas rest for 5 minutes. Garnish with remaining chopped cilantro and optional chopped green onions before serving.

Step 10

Serve hot with a side of rice, beans, or a fresh green salad. Enjoy Grandma Mayre's delicious legacy!
