  • 2 teaspoons Baking soda
  • 1 teaspoons Ground cinnamon
  • 1 teaspoons Ground ginger
  • 0.5 teaspoons Ground cloves
  • 0.25 teaspoons Salt
  • 0.25 cups Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper.

Step 2

In a large mixing bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the egg and molasses to the butter-sugar mixture and beat until fully combined.

Step 4

In another bowl, whisk together the all-purpose flour, baking soda, cinnamon, ginger, cloves, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

Step 6

Scoop out dough using a tablespoon or small cookie scoop and roll it into 1-inch balls.

Step 7

Roll each ball in the additional 0.25 cups of granulated sugar to coat.

Step 8

Place the sugared dough balls about 2 inches apart on the prepared baking sheets.

Step 9

Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers are still slightly soft.

Step 10

Allow the cookies to cool on the baking sheets for 2-3 minutes before transferring them to a wire rack to cool completely.

Step 11

Repeat with remaining dough, and enjoy!
