Ingredients

  • 1 medium head (about 2 pounds) Green cabbage
  • 2 large Carrots
  • 1 cup Mayonnaise
  • 2 tablespoons Apple cider vinegar
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Celery seed
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves from the cabbage and rinse it under cold water. Slice the cabbage into quarters and cut out the core.

Step 2

Finely shred the cabbage using a sharp knife, food processor, or mandoline. Place the shredded cabbage into a large mixing bowl.

Step 3

Peel and grate the carrots using a box grater or food processor. Add the grated carrots to the bowl with the cabbage.

Step 4

In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, granulated sugar, Dijon mustard, celery seed, salt, and black pepper to create the dressing.

Step 5

Pour the dressing over the cabbage and carrots. Toss everything together until the vegetables are evenly coated in the dressing.

Step 6

Taste and adjust seasoning if necessary by adding more salt or pepper.

Step 7

Cover the bowl with plastic wrap and refrigerate the coleslaw for at least 1 hour to allow the flavors to meld.

Step 8

Before serving, toss the coleslaw again to redistribute the dressing. Serve chilled and enjoy!
