Ingredients

  • 1 cup Raisins
  • 0.5 cup Water
  • 2.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 0.75 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar (packed)
  • 2 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

In a small saucepan, combine the raisins and water. Bring to a boil, then reduce the heat and simmer for 5 minutes. Remove from heat and let it cool completely.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Beat in the eggs, one at a time, followed by the vanilla extract. Mix until well combined.

Step 5

Add the cooled raisin mixture (including any liquid) into the wet ingredients and stir to combine.

Step 6

Gradually add the dry ingredients into the wet ingredients, mixing just until combined. If using, fold in the chopped walnuts.

Step 7

Cover the dough and chill in the refrigerator for 1 hour to make it easier to handle.

Step 8

Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats.

Step 9

Drop rounded tablespoonfuls of dough onto the prepared baking sheets, spacing about 2 inches apart.

Step 10

Bake in the preheated oven for 10-12 minutes, or until the cookies are set and the edges are lightly browned.

Step 11

Remove from the oven and let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Store the cookies in an airtight container at room temperature for up to 1 week. Enjoy!
