Ingredients

  • 6 medium russet potatoes
  • 4 tablespoons unsalted butter
  • 1 medium (diced) yellow onion
  • 1.5 cups sour cream
  • 1 can (10.5 ounces) cream of chicken soup
  • 2 cups shredded cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups cornflake cereal
  • 3 tablespoons unsalted butter (melted)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch casserole dish with nonstick spray or butter and set aside.

Step 2

Peel the russet potatoes and chop them into roughly 2-inch pieces. Place them in a large pot, cover with water, and bring to a boil. Cook until the potatoes are fork-tender, about 15 minutes. Drain and let them cool slightly.

Step 3

While the potatoes are cooking, melt 4 tablespoons of unsalted butter in a skillet over medium heat. Add the diced onion and cook until soft and translucent, about 5 minutes. Set aside.

Step 4

In a large mixing bowl, combine the cooked onions, sour cream, cream of chicken soup, shredded cheddar cheese, salt, and black pepper. Mix well.

Step 5

Roughly mash the cooked potatoes (it’s okay if they are slightly chunky for texture) and stir them into the sour cream mixture until evenly combined.

Step 6

Transfer the potato mixture into the prepared casserole dish, spreading it out evenly.

Step 7

In a small bowl, mix the crushed cornflake cereal with the melted butter until well-coated. Sprinkle the buttery cornflakes over the top of the potato mixture in an even layer.

Step 8

Bake the casserole in the preheated oven for 30–35 minutes, or until the top is golden brown and the casserole is bubbling around the edges.

Step 9

Remove from the oven and allow the casserole to cool for 5–10 minutes before serving.

Step 10

Serve warm and enjoy! This dish pairs beautifully with ham, turkey, or any main course.
