  • 1 pound beef stew meat

  • 6 cups beef broth
  • 1 15-ounce can diced tomatoes (with juice)
  • 1 cup frozen green beans
  • 1 cup frozen peas
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large soup pot or Dutch oven over medium-high heat.

Step 2

Season the beef stew meat with 1 teaspoon of salt and 1/2 teaspoon of black pepper, then add it to the pot. Sear the beef for 5-7 minutes, or until browned on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, carrots, and celery. Sauté for 5 minutes until the vegetables start to soften.

Stir in the minced garlic and cook for an additional minute until fragrant.
