Ingredients

  • 2 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, cold and cubed
  • 0.67 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (for brushing)
  • 2 tablespoons coarse sugar (optional, for sprinkling)

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Using a pastry blender, two knives, or your fingertips, cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate small bowl, whisk together the heavy cream, egg, and vanilla extract until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and gently stir until the dough just comes together. Be careful not to overmix.

Step 6

Turn the dough out onto a lightly floured surface and pat it into a round disc about 1 inch thick and 6-7 inches in diameter.

Step 7

Using a sharp knife or bench scraper, cut the disc into 8 equal wedges like you would cut a pizza.

Step 8

Carefully transfer the wedges to the prepared baking sheet, leaving some space between them for expansion.

Step 9

Brush the tops of the scones with milk and sprinkle with coarse sugar if desired for a golden, slightly sweet crust.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown on the top and bottom.

Step 11

Remove from the oven and let the scones cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 12

Serve warm or at room temperature with your favorite jam, clotted cream, or butter. Enjoy!
