Ingredients

  • 1.5 cups Arborio rice
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, finely chopped
  • 3 cloves Garlic, minced
  • 8 ounces White button mushrooms, sliced
  • 4 ounces Cremini mushrooms, sliced
  • 0.5 cups Dry white wine
  • 6 cups Chicken or vegetable stock (low sodium)
  • 0.75 cups Parmesan cheese, grated
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a medium saucepan, warm the chicken or vegetable stock over low heat. Keep it on a low simmer throughout the recipe.

Step 2

In a large, heavy-bottomed pan or skillet, heat the olive oil and 1 tablespoon of butter over medium heat.

Step 3

Add the onion and cook, stirring occasionally, until softened and translucent, about 5 minutes.

Step 4

Stir in the garlic and cook until fragrant, about 1 minute.

Step 5

Add the sliced mushrooms and a pinch of salt. Cook, stirring occasionally, until the mushrooms are browned and have released their moisture, about 8-10 minutes.

Step 6

Stir in the Arborio rice, ensuring every grain is coated with the oil and butter. Toast the rice for 2-3 minutes, stirring frequently.

Step 7

Pour in the white wine and stir. Let it simmer until fully absorbed by the rice, about 2-3 minutes.

Step 8

Add one ladleful (about 1/2 cup) of the warm stock to the rice. Stir constantly until the liquid is almost fully absorbed.

Step 9

Repeat the process, adding one ladleful of stock at a time, stirring frequently, and allowing it to be absorbed before adding more. Continue until the rice is creamy and tender with a slight bite, about 20-25 minutes.

Step 10

Stir in the Parmesan cheese and the remaining 1 tablespoon of butter. Mix well to combine.

Step 11

Season with salt and black pepper to taste. Stir in the chopped parsley for a fresh, herby note.

Step 12

Serve hot, garnished with additional Parmesan cheese and parsley, if desired.
