Ingredients

  • 2 pounds collard greens
  • 1 smoked turkey leg (or smoked ham hock)
  • 1 large onion
  • 4 garlic cloves
  • 6 cups chicken broth
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons olive oil
  • 0.5 teaspoons red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 1 teaspoon sugar
  • 0 to taste hot sauce (optional)

Directions

Step 1

Wash the collard greens thoroughly to remove any dirt or grit. Remove the tough stems and chop the greens into bite-sized pieces.

Step 2

Peel and chop the onion into small pieces. Mince the garlic cloves finely.

Step 3

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Step 4

Add the minced garlic to the pot and cook for 1 minute, stirring frequently to avoid burning.

Step 5

Place the smoked turkey leg (or ham hock) into the pot. Pour in the chicken broth and bring the mixture to a gentle boil.

Step 6

Add the collard greens to the pot a handful at a time, stirring after each addition to help them wilt and fit into the pot.

Step 7

Stir in the apple cider vinegar, red pepper flakes, salt, black pepper, and sugar. Mix well to combine all the flavors.

Step 8

Reduce the heat to low, cover the pot with a lid, and simmer for 1 to 1 1/2 hours, stirring occasionally, until the collard greens are tender and the flavors have melded together.

Step 9

Once done, remove the smoked turkey leg (or ham hock) from the pot. Use a fork to shred the meat and discard the bones. Return the shredded meat to the pot and stir to distribute it evenly.

Step 10

Taste the greens and adjust seasoning if necessary. Optionally, add a dash of hot sauce for extra heat.

Step 11

Serve the collard greens hot as a side dish, and enjoy a comforting plate of Grandma G's soul food classic.
