Ingredients

  • 4 large Russet potatoes
  • 6 tablespoons Butter
  • 1 cup Milk
  • 1 cup Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 teaspoon Garlic powder
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 0.75 cup Panko breadcrumbs
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Olive oil
  • 2 tablespoons Chopped parsley (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish with butter or nonstick spray.

Step 2

Peel and chop the russet potatoes into 1-inch cubes. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat to a simmer. Cook the potatoes for 15-20 minutes, or until they are fork-tender.

Step 4

Drain the potatoes and return them to the pot. Add 4 tablespoons of butter, the milk, and sour cream. Mash the potatoes until smooth and creamy.

Step 5

Stir in 1.5 cups of shredded cheddar cheese, garlic powder, salt, and ground black pepper. Mix until well combined.

Step 6

Transfer the mashed potato mixture into the prepared casserole dish and spread it out evenly.

Step 7

In a small bowl, mix the panko breadcrumbs, Parmesan cheese, and olive oil until the breadcrumbs are evenly coated.

Step 8

Sprinkle the breadcrumb mixture evenly over the mashed potatoes, followed by the remaining 0.5 cup of shredded cheddar cheese.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and crispy.

Step 10

Remove from the oven and let the casserole cool for 5 minutes. Garnish with chopped parsley, if desired, before serving.
