Ingredients

  • 8 cups Cornbread
  • 1 cup Unsalted butter
  • 2 cups Celery, diced
  • 2 cups Yellow onion, diced
  • 4 cups Chicken or vegetable stock
  • 2 large Eggs, lightly beaten
  • 2 teaspoons Sage, dried
  • 1 teaspoon Thyme, dried
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Parsley, fresh, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Step 2

Prepare 8 cups of crumbled cornbread in advance (can be homemade or store-bought). Spread the crumbled cornbread onto a baking sheet and toast lightly in the oven, about 10 minutes, to dry it out if it’s very moist.

Step 3

In a large skillet, melt the butter over medium heat. Add the diced celery and onion and sauté for about 8-10 minutes, or until softened and translucent. Remove from heat.

Step 4

In a large mixing bowl, combine the toasted cornbread, cooked celery and onion mixture, and all seasonings (sage, thyme, salt, black pepper, and fresh parsley). Toss gently to mix.

Step 5

In the same bowl, pour the chicken or vegetable stock over the cornbread mixture a little at a time, stirring gently. The mixture should be moist but not soggy.

Step 6

Add the beaten eggs to the stuffing mixture and fold gently to combine. This will help bind the stuffing during baking.

Step 7

Transfer the mixture into the prepared baking dish and spread it out evenly.

Step 8

Bake in the preheated oven for 40-45 minutes, or until the top is golden brown and the dressing is set.

Step 9

Allow the stuffing to cool for about 5-10 minutes before serving. Garnish with extra fresh parsley if desired.
