Ingredients

  • 4 cups rolled oats
  • 1 cup raw almonds
  • 1 cup raw pecans
  • 0.5 cup sunflower seeds
  • 0.5 cup pumpkin seeds (pepitas)
  • 1 cup unsweetened shredded coconut
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon salt
  • 0.5 cup maple syrup
  • 0.5 cup coconut oil, melted
  • 2 teaspoons vanilla extract
  • 0.5 cup dried cranberries
  • 0.5 cup raisins

Directions

Step 1

Preheat your oven to 325°F (160°C) and line two large baking sheets with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almonds, pecans, sunflower seeds, pumpkin seeds, shredded coconut, ground cinnamon, and salt. Mix well.

Step 3

In a medium bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.

Step 4

Pour the wet ingredients over the dry ingredients and stir until the mixture is evenly coated.

Step 5

Divide the granola mixture evenly between the prepared baking sheets, spreading it out in an even layer.

Step 6

Bake in the preheated oven for 10 minutes, then remove the trays, stir the granola carefully, and rotate the trays to ensure even baking.

Step 7

Return the granola to the oven and bake for an additional 10-15 minutes, or until golden brown and fragrant. Keep a close eye to prevent burning.

Step 8

Remove the baking sheets from the oven and allow the granola to cool completely on the trays. It will crisp up as it cools.

Step 9

Once cool, stir in the dried cranberries and raisins.

Step 10

Store the granola in an airtight container at room temperature for up to 2 weeks. Enjoy it with yogurt, milk, or as a snack on its own!
