Ingredients

  • 1 pound Ground beef
  • 8 slices Bacon, diced
  • 1 medium Yellow onion, diced
  • 30 ounces Baked beans (with sauce)
  • 15 ounces Kidney beans, drained and rinsed
  • 15 ounces Lima beans, drained and rinsed
  • 0.75 cup Brown sugar
  • 0.5 cup Ketchup
  • 1 tablespoon Yellow mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet over medium heat, cook the diced bacon until crispy. Remove the bacon with a slotted spoon and place it on a plate lined with paper towels. Leave about 2 tablespoons of bacon grease in the skillet.

Step 3

Add the diced onion to the skillet with the bacon grease and sauté until translucent, about 3-4 minutes.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess grease from the skillet.

Step 5

In a large mixing bowl, combine the baked beans (with their sauce), kidney beans, and lima beans.

Step 6

Stir in the cooked ground beef, bacon, and sautéed onions.

Step 7

Add the brown sugar, ketchup, mustard, apple cider vinegar, salt, and black pepper to the bean mixture. Mix everything thoroughly until well combined.

Step 8

Transfer the mixture to a large casserole dish (9x13 inches works well).

Step 9

Cover the dish with aluminum foil and bake in the preheated oven for 50 minutes. Remove the foil and bake for an additional 10 minutes, or until the top is slightly caramelized and bubbly.

Step 10

Remove from the oven and let rest for 5-10 minutes before serving. Enjoy Grandma Becky's Calico Beans warm with your favorite sides or as a standalone dish!
