Ingredients

  • 2 Red apples
  • 2 Green apples
  • 3 Celery stalks
  • 1 cup Red seedless grapes
  • 1 cup Walnuts
  • 1 cup Mayonnaise
  • 0.5 cup Plain Greek yogurt
  • 2 tablespoons Lemon juice
  • 1 tablespoon Honey
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 Romaine lettuce leaves

Directions

Step 1

Toast the walnuts: Preheat a dry skillet over medium heat. Add the walnuts and toast them for about 5 minutes, stirring frequently to avoid burning. Remove from heat and let them cool.

Step 2

Core and dice the red and green apples into bite-sized pieces, leaving the skin on for color and texture. Place them into a large mixing bowl.

Step 3

Chop the celery stalks into small, bite-sized slices and add them to the bowl with the apples.

Step 4

Halve the red seedless grapes and add them to the mixture in the bowl.

Step 5

In a separate small bowl, whisk together the mayonnaise, Greek yogurt, lemon juice, honey, salt, and black pepper to create a smooth and creamy dressing.

Step 6

Pour the dressing over the apple, celery, and grape mixture and gently toss until all ingredients are evenly coated.

Step 7

Roughly chop the cooled toasted walnuts and gently fold them into the salad mixture, reserving a small handful for garnish.

Step 8

Lay the romaine lettuce leaves on a serving platter. Spoon the Waldorf Salad onto the bed of lettuce leaves or into individual bowls for serving.

Step 9

Garnish with the reserved walnuts and serve immediately. Enjoy Grandma's classic Waldorf Salad as a light lunch or a refreshing side dish!
