Ingredients

  • 6 tablespoons unsalted butter
  • 1 medium yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 large celery stalks, diced
  • 1 cup frozen peas
  • 0.5 cup all-purpose flour
  • 2 cups chicken or turkey broth
  • 0.5 cup heavy cream
  • 3 cups cooked turkey, shredded or cubed
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 sheets refrigerated pie crusts
  • 1 egg, beaten (for egg wash)

Directions

Step 1

Preheat your oven to 400°F (204°C).

Step 2

In a large skillet or saucepan, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5-7 minutes, until the vegetables are softened.

Step 3

Stir in the frozen peas and cook for another 2 minutes.

Step 4

Sprinkle the flour over the vegetables and stir constantly for about 1-2 minutes, allowing the flour to cook slightly and coat the veggies.

Step 5

Gradually pour in the chicken or turkey broth, stirring constantly to prevent lumps. Continue stirring until the mixture thickens, about 3-4 minutes.

Step 6

Stir in the heavy cream, followed by the shredded turkey, fresh thyme, salt, and black pepper. Mix well, then remove from heat.

Step 7

On a lightly floured surface, roll out one sheet of the pie crust to fit into a 9-inch pie dish. Press the crust into the bottom and up the sides of the dish.

Step 8

Spoon the turkey and vegetable filling into the pie crust, spreading it evenly.

Step 9

Roll out the second sheet of the pie crust and place it over the filling. Trim any excess crust and crimp the edges together to seal. Cut a few small slits into the top crust to allow steam to escape.

Step 10

Brush the top crust with beaten egg to achieve a golden finish.

Step 11

Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and flaky.

Step 12

Remove from the oven and let the pot pie rest for 5-10 minutes before slicing and serving.
