Ingredients

  • 12 oz elbow macaroni
  • 4 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk
  • 1.5 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 0.5 cups parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp paprika
  • 1 cup panko breadcrumbs
  • 2 tbsp olive oil
  • 2 tbsp fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set it aside.

Step 2

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.

Step 3

In a large saucepan, melt the butter over medium heat. Once melted, whisk in the flour and cook for 1-2 minutes to form a roux.

Step 4

Gradually whisk in the milk, ensuring there are no lumps. Cook the mixture, stirring constantly, until it thickens and begins to bubble, about 5-7 minutes.

Step 5

Reduce the heat to low and stir in the salt, black pepper, and paprika. Add the shredded cheddar cheese, mozzarella cheese, and grated parmesan cheese, stirring until melted and the sauce is smooth.

Step 6

Pour the cheese sauce over the cooked macaroni and gently mix until the pasta is evenly coated.

Step 7

Transfer the macaroni and cheese mixture to the prepared baking dish, spreading it into an even layer.

Step 8

In a small bowl, combine the panko breadcrumbs with the olive oil. Sprinkle the breadcrumb mixture evenly over the top of the casserole.

Step 9

Bake the casserole in the preheated oven for 20-25 minutes, or until the top is golden and crispy.

Step 10

Remove the casserole from the oven and let it rest for 5 minutes before serving.

Step 11

Garnish with fresh parsley if desired, and serve warm. Enjoy!
