Ingredients

  • 4 large sweet potatoes
  • 0.5 cup butter
  • 0.75 cup brown sugar
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon salt
  • 2 cups mini marshmallows

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel the sweet potatoes and cut them into 1/2-inch thick rounds.

Step 3

Bring a large pot of water to a boil and cook the sweet potatoes for 10-12 minutes, or until they are tender but still hold their shape. Drain and set aside.

Step 4

In a small saucepan over medium heat, melt the butter. Stir in the brown sugar, cinnamon, nutmeg, vanilla extract, and salt. Cook for 2-3 minutes until the sugar is dissolved and the mixture is smooth.

Step 5

In a 9x13 inch baking dish, layer the cooked sweet potato slices evenly.

Step 6

Pour the brown sugar glaze over the sweet potatoes, making sure they are evenly coated.

Step 7

Cover the baking dish with foil and bake for 25 minutes.

Step 8

Remove the foil, sprinkle the mini marshmallows evenly over the sweet potatoes, and bake uncovered for an additional 10-15 minutes, or until the marshmallows are golden and gooey.

Step 9

Remove from the oven and let cool for a few minutes before serving. Enjoy!
