Ingredients

  • 1000 grams pork shoulder
  • 2 tablespoons olive oil
  • 2 medium yellow onion
  • 3 whole garlic cloves
  • 2 tablespoons sweet paprika
  • 1 teaspoon caraway seeds
  • 2 tablespoons tomato paste
  • 500 grams sauerkraut
  • 500 milliliters beef or chicken stock
  • 3 medium potatoes
  • 200 grams sour cream
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the pork shoulder into bite-sized chunks and set aside.

Step 2

Peel and finely chop the onions and garlic.

Step 3

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 4

Add the onions and cook until translucent, about 5 minutes.

Step 5

Add the garlic and sweet paprika, stirring for 1 minute until fragrant.

Add the pork chunks to the pot and brown evenly on all sides, about 5-7 minutes.
