Ingredients

  • 6 pieces bell peppers
  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 2 pieces, minced garlic cloves
  • 1.5 cups cooked white rice
  • 15 ounces canned diced tomatoes
  • 15 ounces tomato sauce
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 1 cup shredded mozzarella cheese

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cut the tops off the bell peppers and remove the seeds and membranes. Lightly trim the bottoms if needed so the peppers can stand upright. Set aside.

Step 3

In a large skillet over medium heat, cook the ground beef until browned, breaking it up with a spoon as it cooks. Drain any excess grease.

Step 4

Add the diced onion and minced garlic to the skillet with the ground beef. Sauté for 3-4 minutes, or until the onion is soft.

Step 5

Stir in the cooked rice, canned diced tomatoes, Italian seasoning, salt, black pepper, and chopped parsley. Mix until well combined and heated through.
