Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 2.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 0.5 cup whole milk
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh strawberries, pureed
  • 2 drops red food coloring (optional)
  • 8 ounces cream cheese, softened
  • 0.5 cup unsalted butter, softened (for frosting)
  • 4 cups powdered sugar
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 cup fresh strawberries, sliced (for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and lightly flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the flour, sugar, baking powder, and salt.

Step 3

Add the softened butter, eggs, milk, and vanilla extract to the dry ingredients and beat with a hand mixer or stand mixer on medium speed until well-combined.

Step 4

Fold in the pureed strawberries. If desired, add 2 drops of red food coloring for a more vibrant pink hue.

Step 5

Divide the batter evenly between the prepared cake pans and smooth out the tops with a spatula.

Step 6

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center comes out clean.

Step 7

Remove the cakes from the oven and let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

Step 8

While the cakes are cooling, prepare the cream cheese frosting. In a large bowl, beat the cream cheese and softened butter together until smooth and creamy.

Step 9

Gradually add the powdered sugar, 1 cup at a time, beating on low speed until fully incorporated. Mix in the vanilla extract.

Step 10

Once the cakes are completely cool, spread a layer of frosting over the first cake layer, then place the second cake layer on top.

Step 11

Frost the top and sides of the cake evenly with the remaining frosting.

Step 12

Garnish the cake with sliced fresh strawberries around the edges or on top as desired.

Step 13

Chill the cake in the refrigerator for at least 1 hour before serving for the best texture and flavor.
