  • 1 pound dried split peas
  • 1 ham bone (or smoked ham hock)
  • 3 large carrots
  • 3 celery stalks

  • 1 teaspoon dried thyme
  • 8 cups chicken stock (or vegetable stock)
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 tablespoon olive oil

Directions

Step 1

Rinse the split peas thoroughly under cold water until the water runs clear. Set aside.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 3

Dice the onion, carrots, and celery. Mince the garlic cloves.

Step 4

Add the onion, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened and the onion is translucent.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add the ham bone (or smoked ham hock) to the pot along with the rinsed split peas, chicken stock, bay leaf, and dried thyme. Stir to combine.
