Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large eggs
  • 1.5 cups unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 0.5 cup raisins (optional)
  • 0.5 cup chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour a 9x9-inch baking pan, or line it with parchment paper.

Step 2

In a medium mixing bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and cloves. Set aside.

Step 3

In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and well combined.

Step 4

Add the eggs one at a time to the butter and sugar mixture, beating well after each addition.

Step 5

Mix in the applesauce and vanilla extract until fully incorporated.

Step 6

Gradually add the dry ingredients to the wet ingredients, stirring just until combined. Be careful not to overmix.

Step 7

If using, fold in the raisins and chopped walnuts gently with a spatula.

Step 8

Pour the batter into the prepared baking pan and spread it out evenly.

Step 9

Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Remove the cake from the oven and let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Step 11

Slice and serve the cake on its own or with a dollop of whipped cream. Enjoy!
