Ingredients

  • 6 pieces bell peppers
  • 1 pound ground beef
  • 1 cup cooked white rice
  • 1 small yellow onion, diced
  • 2 cloves garlic, minced
  • 1.5 cups tomato sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil
  • 0.5 cup water

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, cut off the tops of the bell peppers and scoop out the seeds and membranes. Rinse the peppers and set them aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and cook until soft, about 3-4 minutes. Add the minced garlic and cook for an additional minute.

Step 4

Add the ground beef to the skillet and cook until browned, breaking it up into small pieces. Drain any excess fat if necessary.

Step 5

Stir in the cooked rice, 1 cup of tomato sauce, dried oregano, dried basil, salt, and black pepper. Cook for 2-3 minutes until the mixture is well combined and heated through. Remove from heat.

Step 6

Stuff each bell pepper with the beef and rice mixture, pressing it down lightly to ensure it’s tightly packed.

Step 7

Place the stuffed peppers upright in a baking dish. Pour the remaining 0.5 cup of tomato sauce over the peppers and add water to the bottom of the dish to keep them moist while baking.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes.

Step 9

Remove the foil, sprinkle the shredded mozzarella cheese over the tops of the peppers, and bake for an additional 10 minutes until the cheese is melted and bubbly.

Step 10

Remove from the oven and let the peppers cool for 5 minutes before serving. Enjoy Grandma's classic stuffed bell peppers!
