Ingredients

  • 2 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter (cold)
  • 0.75 cup Heavy cream (plus extra for brushing)
  • 1 Large egg
  • 1 teaspoon Vanilla extract
  • 0.5 cup Optional: Currants, raisins, or chocolate chips

Directions

Step 1

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

Step 3

Cut the cold butter into small cubes and add it to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a small bowl, whisk together the heavy cream, egg, and vanilla extract. Pour this wet mixture into the dry ingredients, stirring just until the dough comes together. If using add-ins like currants, raisins, or chocolate chips, fold them in now.

Step 5

Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Pat it into a round disc about 1 inch thick.

Step 6

Use a sharp knife to cut the dough into 8 wedges, like a pie, or use a round cookie cutter to shape the scones as desired.

Step 7

Place the scones on the prepared baking sheet, leaving space between each. Brush the tops lightly with additional heavy cream for a golden finish.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown on top.

Step 9

Remove from the oven and allow the scones to cool slightly. Serve warm with jam, clotted cream, or butter.
