Ingredients

  • 1 cup white rice
  • 2 cups water
  • 3 cups whole milk
  • 0.5 cup granulated sugar
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 0.5 cup raisins (optional)
  • 1 tablespoon butter

Directions

Step 1

In a medium saucepan, combine the rice and water. Bring to a boil over medium-high heat.

Step 2

Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 minutes until the water is absorbed and the rice is tender.

Step 3

Stir in the milk, sugar, salt, and cinnamon. Increase the heat to medium and bring the mixture to a gentle boil, stirring frequently to prevent the rice from sticking.

Step 4

Lower the heat to a simmer and cook uncovered for 25-30 minutes, stirring occasionally, until the pudding thickens to your desired consistency.

Step 5

Remove the saucepan from the heat. Stir in the vanilla extract, raisins (if using), and butter until well combined.

Step 6

Let the pudding cool for 5-10 minutes. It will continue to thicken as it cools.

Step 7

Serve warm or chilled, garnished with an extra sprinkle of cinnamon if desired. Enjoy Grandma's classic rice pudding!
