Ingredients

  • 6 cups rhubarb (fresh or thawed if frozen)
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1 cup brown sugar (packed)
  • 1 cup all-purpose flour (for topping)
  • 1 teaspoon ground cinnamon
  • 1 cup unsalted butter (cold, cut into small cubes)
  • 0.25 teaspoons salt
  • 0 vanilla ice cream (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with butter or non-stick cooking spray.

Step 2

In a large mixing bowl, combine the rhubarb, granulated sugar, and 3 tablespoons of flour. Toss to coat the rhubarb evenly. Transfer the mixture to the prepared baking dish and spread it out evenly.

Step 3

In another mixing bowl, prepare the crumble topping. Stir together the oats, brown sugar, 1 cup of flour, cinnamon, and salt.

Step 4

Add the cold butter cubes to the topping mixture. Using a pastry cutter, fork, or your fingers, work the butter into the dry ingredients until the mixture resembles coarse crumbs.

Step 5

Sprinkle the crumble topping evenly over the rhubarb mixture in the baking dish.

Step 6

Place the baking dish in the preheated oven and bake for 40–45 minutes, or until the topping is golden brown and the rhubarb filling is bubbling.

Step 7

Remove the rhubarb crisp from the oven and let it cool for about 10 minutes before serving.

Step 8

Serve warm with a scoop of vanilla ice cream, if desired. Enjoy Grandma’s Rhubarb Crisp!
