Ingredients

  • 3 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 cup Unsalted butter (softened)
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.25 cup Milk
  • 2 cups Raisins
  • 0.5 cup Brown sugar
  • 0.5 cup Water
  • 1 tablespoon Cornstarch

Directions

Step 1

Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper or lightly grease them.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, using a hand or stand mixer on medium speed.

Step 4

Add the eggs one at a time, beating well after each addition, then mix in the vanilla extract.

Step 5

Alternate adding the dry flour mixture and milk into the butter mixture. Start and end with the dry ingredients. Mix until a soft dough forms.

Step 6

Cover the dough and refrigerate for 1 hour to make it easier to handle.

Step 7

While the dough chills, prepare the raisin filling. In a small saucepan, combine the raisins, brown sugar, and water. Heat over medium heat until the mixture starts to simmer.

Step 8

In a small bowl, whisk together the cornstarch with 1 tablespoon of water to make a slurry. Stir the slurry into the simmering raisin mixture and cook for 2-3 minutes until thickened. Remove from heat and let it cool to room temperature.

Step 9

Once chilled, roll out the dough on a floured surface to about 1/8-inch thickness. Use a round cookie cutter (about 2-3 inches in diameter) to cut out circles.

Step 10

Place half of the circles on the prepared baking sheets. Spoon about 1 teaspoon of the cooled raisin filling into the center of each circle, leaving enough room around the edges.

Step 11

Cover each filled circle with another dough circle and press the edges together to seal. You can use a fork to crimp the edges for a decorative touch.

Step 12

Bake in the preheated oven for 10-12 minutes, or until the edges just start to turn golden brown.

Step 13

Remove from the oven and let the cookies cool on the baking sheets for 2 minutes before transferring to a wire rack to cool completely.

Step 14

Serve and enjoy the comforting taste of Grandma's Raisin Filled Cookies with a glass of milk or a cup of tea!
