Ingredients

  • 6 large Russet potatoes
  • 6 tablespoons Unsalted butter
  • 2 medium, diced Yellow onion
  • 4 medium, diced Celery stalks
  • 4 cups Bread cubes
  • 0.5 cup Chicken broth
  • 1 teaspoon Dried sage
  • 1 teaspoon Dried thyme
  • 2 teaspoons Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup Milk
  • 2 tablespoons, chopped (optional) Fresh parsley

Directions

Step 1

Peel and chop the russet potatoes into even-sized chunks.

Step 2

Place the potatoes in a large pot and cover with water. Add 1 teaspoon of salt and bring to a boil over medium-high heat. Cook for 15-20 minutes or until the potatoes are fork-tender.

Step 3

While the potatoes are boiling, melt 4 tablespoons of butter in a large skillet over medium heat.

Step 4

Add the diced onion and celery to the skillet and sauté until softened, about 5-7 minutes.

Step 5

Stir in the dried sage, dried thyme, 1 teaspoon of salt, and black pepper. Cook for 1-2 minutes until fragrant, then remove the skillet from the heat and set aside.

Step 6

Drain the boiled potatoes and return them to the pot. Add the remaining 2 tablespoons of butter and the milk. Mash the potatoes until smooth and creamy.

Step 7

Gently fold the sautéed onion-celery mixture and the bread cubes into the mashed potatoes. Mix until the ingredients are evenly combined.

Step 8

Pour the chicken broth into the mixture gradually, stirring until the stuffing holds together but isn’t overly wet.

Step 9

Preheat your oven to 350°F (175°C).

Step 10

Grease a 9x13-inch baking dish and transfer the potato stuffing mixture into it, spreading it evenly.

Step 11

Bake the stuffing in the preheated oven for 25-30 minutes, or until the top is lightly golden and slightly crispy.

Step 12

Garnish the stuffing with fresh parsley before serving, if desired.
