Ingredients

  • 5 large Russet potatoes
  • 1 medium Yellow onion
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 2 small Garlic cloves
  • 3 tablespoons Butter
  • 3 tablespoons All-purpose flour
  • 6 cups Chicken or vegetable broth
  • 2 cups Whole milk
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 0.5 teaspoons Dried thyme
  • 1 cup Cheddar cheese (optional, for topping)
  • 2 tablespoons Chopped fresh parsley (optional, for garnish)
  • 4 strips Cooked crumbled bacon (optional, for topping)

Directions

Step 1

Peel and dice the potatoes into 1-inch cubes. Set them aside in a bowl of cold water to prevent browning.

Step 2

Dice the onion, carrots, and celery into small, even pieces. Mince the garlic cloves finely.

Step 3

In a large stockpot or Dutch oven, melt the butter over medium heat. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes, or until softened.

Step 4

Add the minced garlic to the pot and cook for 1 minute, stirring frequently, until fragrant.

Step 5

Sprinkle the flour over the vegetable mixture and stir to combine. Cook for 2 minutes to eliminate the raw flour taste.

Step 6

Slowly pour in the chicken or vegetable broth, whisking constantly to prevent lumps. Bring the mixture to a simmer.

Step 7

Drain the potatoes and add them to the pot. Stir in the salt, ground black pepper, and dried thyme. Cover the pot and simmer for 15-20 minutes, or until the potatoes are fork-tender.

Step 8

Using a potato masher, lightly mash some of the potatoes in the pot to thicken the soup. Leave some chunks for texture.

Step 9

Stir in the whole milk and let the soup simmer for an additional 5 minutes. Taste and adjust seasoning as needed.

Step 10

Serve the soup hot, garnished with optional toppings such as shredded cheddar cheese, chopped fresh parsley, and crumbled bacon. Enjoy!
